Crude – Chinese Vegetable Cleaver Knife, 7 inch, Carbon Steel, Super Thin & Light

I’m a knife nerd. This is a very nice thin knife, works very nicely on veg prep. If you’re used to overbuilt chunky knives that wedge and get stuck into food, this will be a real treat. Easy to sharpen, takes a nice edge with moderate edge retention.Couple complaints: Handle wood is terrible. Not sure what kind of wood it is, but you can never sand it smooth, it always retains an awful rough feeling. Second, I’m not a fan of the “upswing” on the heel of the blade. Haven’t found a use for it, and more often than not it causes incomplete cuts.
